Keto-Friendly Scotch Eggs

The first time I made scotch eggs was when I worked at the Kakuma Refugee Camp. I remember that I had to leave out and substitute several ingredients. My colleagues loved them, and I also loved them too. I had a craving for them today, and just a reminder, I am currently following the Keto WOE (Way Of Eating), which meant that I had to adapt it to suit my dietary needs. I definitely will be making these a lot now, I enjoyed them and so did my non-keto family who obviously had to try some too.
